Week 2, of the No-Spend January Challenge was, pretty much, a breeze! There were a few times, where I thought about buying something non-essential, but then I, quickly, realized that I’m doing this challenge, and that I can wait to see if I really NEED that item at a later date.
So, here’s a recap of Week 2 of the No-Spend January Challenge:
NO-SPEND JANUARY CHALLENGE – WEEK 2 RECAP – January 8th through 14th
How much did you spend?
I spent NOTHING on non-essential items, so my monthly running total remains at $2.86! 🙂
Do you have any tips for staying on-track with the challenge?
I can’t really think of any new tips to share this week besides the fact that I have, kind of, “pretended” like I was shopping on Amazon, a few times, and all I did was add items to my cart, that I might want to purchase in February. These items will help with my Meal Planning and Organization Goals. You can read about those items at the end of this blog post. Did you meet your Week 2 Goals?
Meal Planning – I did do some meal planning, but I didn’t write it out, except for texting the grocery list to my husband :). I kept the meals “in my head”, and it worked out pretty great! We ate what we cooked and did not hit the vending machines at work, nor any fast food restaurants! I call that a win!
We cooked the following meals during the week (I don’t have fancy recipe names, but you’ll get the idea, of what I cooked, from my descriptions, lol.):
Pressure-Cooked Steaks with Gravy and Rice (I cooked the rice, separately in my rice cooker.)
Grilled Steaks with Macaroni & Cheese – I cooked the steaks using my NuWave Oven.
Meatloaf with Gravy and Rice – One night, we used leftover Macaroni & Cheese in place of the rice! That was pretty darn tasty, plus it gave a little variety.
Grilled Chicken Salad – I cooked the chicken in my NuWave Oven, cut it up with meat scissors, boiled some eggs, and we made salads. We also had the option to add some shredded cheddar cheese, bacon bits, and some kind of salad seasoning (I don’t know the exact name) to our salads.
I cooked more than enough for multiple meals, of each recipe, throughout the week. For example, that Meatloaf was made with 3 pounds of ground meat!
Buy Groceries in Bulk – We bought chicken, steaks and ground meat in bulk, along with some “quick dinners” from the frozen food section at Sam’s Club. We really didn’t touch the frozen dinners this week, except for one night.
USE MY PLANNER! – I totally failed at using my planner! I just don’t know why I just cannot remember to use one. Maybe because I’m always in a hurry, no matter what it is that I’m doing, and I feel like stopping, to write things down, wastes time. I know it would make me more organized, so if anyone has any tips and tricks to get me to use my planner, I am all ears! 🙂
Continue the 30-day Ningxia Challenge and Slique-in-60 Challenges! – I followed through with these challenges, except that I need to continue to work on my food choices. I did pretty good at remembering to take my Slique supplements, and I’ve been doing EXTREMELY WELL with remembering to drink my Ningxia Red every day! Return items to HSN and QVC that I did not need, but purchased, during the holidays! – Round 1 of “Operating Return Stuff You Don’t Need” happened last week, LOL. The plan is to return MOST of the unneeded items this week. The hubby will be making the trip to the post office and Fedex/UPS on one of his off days. We might finally get our living room back! LOL
GOALS FOR WEEK 3
- Write out a meal plan!
- USE MY PLANNER! Round 2! lol

Oh! Before I forget, here are the items, that I plan to purchase in February, to help me improve my Meal Planning and Organization Skills!
In February, I plan to buy the following items. They are magnetic planners, along with magnetic dry erase markers! They should fit, perfectly, on the doors of my refrigerator, so that they will be staring me, in the face, multiple times during the day! 🙂
